Warming autumn puree soup

6 steps
Prep:40min
This creamy carrot and orange soup is a simple, warming dish with a fresh and slightly sweet twist. The combination of carrots, orange and ginger gives it a bright, comforting flavour, while the potatoes make it smooth and creamy. It’s quick to prepare and perfect for a cosy lunch or light dinner.

Instructions

Step 1
Melt some butter in a pot and gently sauté the onion, garlic and ginger. Be careful not to let them brown.
Step 2
After a little while, add the carrots and potatoes and sauté for a few more minutes. Then squeeze the juice of one orange directly into the pot.
Step 3
Add the prepared stock, using just enough to cover the vegetables. Simmer over low heat until all the vegetables are nice and soft.
Step 4
Pour some of the stock into a separate bowl and set it aside so you can adjust the consistency of the soup later. Add the juice of the second orange, then blend the soup until smooth. Add some of the reserved stock back in if you want a thinner consistency.
Step 5
If you'd like to add some meat, sprinkle crispy bacon bits on top. Otherwise, you can generously add croutons, cheese, or fresh herbs such as sage or basil.
Step 6
Finish with freshly ground salt and black pepper.
