Cajun Sheet Pan Chicken, Andouille, Potatoes & Corn

Instructions

Step 1
Roast the potatoes: Heat oven to 425°F. Toss potatoes with 1½ Tbsp olive oil and about 1 tsp of the seasoning mixture. Spread cut-side down on a large sheet pan. Roast for 15 minutes.
Step 2
Season everything else: Toss chicken, andouille, corn, peppers and onion with the remaining 1½ Tbsp olive oil and remaining seasoning mixture.
Step 3
Add to the sheet pan: Remove potatoes from oven and add the chicken, sausage, corn and vegetables, spreading everything into an even layer.
Step 4
Roast: Return to oven for 20–25 minutes, tossing once halfway through, until the potatoes are tender and the chicken reaches 165°F. For extra browning, broil for the final 2–3 minutes.
Step 5
Make the drizzle: Stir together mayonnaise, lemon juice, hot sauce and Cajun seasoning.
Step 6
Finish: Drizzle the hot sheet pan with 1 Tbsp melted butter. Sprinkle with green onions and parsley and give everything a squeeze of fresh lemon.
Step 7
Serve with the Cajun drizzle and extra hot sauce on the side.
