Instructions
Step 1
Heat the oven - Heat the oven to 300°F. Set a baking dish or sheet pan of very hot water on the bottom rack. This creates a gentler oven environment; it is not a submerged sous vide bath.
Step 2
Prepare the molds - Grease two 12-cup silicone muffin pans well. You can also use metal ones, but make sure to oil them well. Divide the chopped bacon evenly among the 24 wells.
Step 3
Blend the filling - Blend the eggs, cottage cheese, Gruyère, Monterey Jack, cornstarch, salt and pepper until completely smooth, about 30 seconds.
Step 4
Fill and bake - Divide the mixture evenly among the wells, leaving a little room at the top. Bake 25 to 35 minutes, until the centers are just set and an instant-read thermometer registers 160°F. If your oven fits only one pan, bake in two rounds.
Step 5
Rest and release - Rest 5 to 10 minutes before lifting the bites from the molds. Their centers should be tender, not rubbery. Let cool promptly before storing.
Step 6
This recipe states 24 eggs bites. However, using a mini muffin pan, I got exactly 72. Also, I used a condiment squeeze bottle to fill the cups. It was very clean and easy. I reduced cooking time to 15-20 min until bites are 160°
