Instructions
Step 1
1. Cook the rice. Rinse 1 cup jasmine rice. Cook according to package instructions, usually with 1¼–1½ cups water. Simmer covered for 12–15 minutes, then rest for 5 minutes.
Step 2
2. Prepare the sauce. Whisk soy sauce, gochujang, honey, rice vinegar, sesame oil, cornstarch, and water in a small bowl.
Step 3
3. Brown the beef. Heat a large skillet over medium-high heat. Add ground beef and spread into an even layer. Let cook undisturbed for 3–4 minutes to develop a nice crust. Break apart and cook until fully browned.
Step 4
4. Add aromatics. Stir in garlic, ginger, and minced hot pepper. Cook for 60 seconds until fragrant.
Step 5
5. Glaze the beef. Reduce heat to medium. Stir the sauce again, pour over the beef, and toss for 1–2 minutes until thickened and glossy.
Step 6
6. Prepare the vegetables. Cook edamame according to package directions. Shred carrots, dice cucumber, and slice scallions.
Step 7
7. Assemble. Divide rice among four bowls, top with beef, edamame, carrots, cucumber, scallions, and sesame seeds. Finish with fresh lime if desired.
Step 8
Chef's tip: Don't stir the beef constantly. Allowing it to brown before breaking it apart develops much better flavor. For a lower-sodium version, use 2 tablespoons soy sauce instead of 3 and add a little extra water and rice vinegar.
