Instructions

Step 1
Preheat oven to 400°F (200°C). Add your Boursin cheese, diced bell peppers, diced onion, cherry tomatoes, and garlic bulb to a 9×13-inch baking dish. Add your Cajun seasoning blend and drizzle with olive oil. Bake uncovered for 30–35 minutes until the vegetables soften and the tomatoes begin to burst.
Step 2
2. Season your chicken breast and sear in a Blackstone (or large skillet) over medium-high heat for around 5–6 minutes per side or until browned and cooked through to 165°F (74°C).
Step 3
3. Add your sliced smoked turkey sausage to the same skillet and cook for 3–5 minutes, flipping occasionally until both sides develop a nice golden-brown sear. Set aside with your cooked chicken.
Step 4
4. Cook your pasta according to package instructions until al dente.
Step 5
5. Remove the baking dish from the oven. Mash the softened garlic, burst the tomatoes, and mix everything together with the Boursin until you have a creamy Cajun sauce.
Step 6
6. Add your cooked chicken, sausage, and pasta directly into the baking dish and mix until everything is evenly coated in that creamy sauce.
Step 7
7. Finish with freshly chopped parsley and the juice of half a lemon. Divide into 6 meals and enjoy!
Step 8
Meal Prep: Store in airtight containers in the refrigerator for up to 3–4 days.
