beans
yellow onion

Toppings
Instructions
Step 1
1. **Combine the Base:*** Add the rinsed and drained beans, diced onion, bell pepper, minced garlic, and corn directly into the slow cooker.
Step 2
2. **Pour the Sauce:*** Pour the jar(s) of Trader Joe's taco sauce and the 1/2 cup of vegetable broth over the bean and vegetable mixture. Stir well to ensure everything is evenly coated.
Step 3
3. **Cook:*** Cover and cook on **LOW for 4 to 6 hours** (or **HIGH for 2 to 3 hours**) until the vegetables are tender and the beans have absorbed the rich taco sauce flavor.
Step 4
4. **Finish & Serve:*** Give the chili a good stir—some of the beans will naturally break down, creating a thick, hearty stew consistency. Ladle into bowls and top with your favorite taco fixings like avocado, cheese, and fresh cilantro.
