Instructions

Step 1
Wash the orange thoroughly and finely grate the zest, avoiding the white pith, which can taste bitter. Squeeze the orange and measure out 100 ml of juice.

In a large bowl, whisk the eggs and sugar together for 1-2 minutes. Add the melted butter, allowing it to cool slightly first, followed by the orange juice, milk, vanilla extract and orange zest. Mix until combined.

Step 3
In a separate bowl, combine the flour, baking powder and salt. Add the dry ingredients to the wet mixture and gently fold with a spatula until just combined. A few small lumps are fine. Avoid overmixing, as this can make the muffins dense.

Preheat your oven to 180°C conventional or 160°C fan. Line a 12-hole muffin tin with paper cases. Divide the batter evenly between them, filling each case about two-thirds to three-quarters full.

Step 5
Bake for 18-23 minutes, until the muffins have risen and turned lightly golden. Insert a toothpick into the centre of a muffin. If it comes out clean or with a few dry crumbs, they're ready. Leave the muffins in the tin for 5 minutes, then transfer them to a wire rack to cool.

Orange Glaze

Step 6
Mix the icing sugar with the orange juice, adding the juice gradually until you have a thick but pourable glaze. Drizzle over the muffins once completely cool.
