Instructions
Step 1
Prep your ingredients
• Finely dice the white onion.
• Slice the sausages into bite-sized coins.
Step 2
Boil the pasta
• Boil water in a pot, add a generous pinch of salt, and cook your pasta according to the box instructions.
• Important: Right before you drain the pasta, scoop out 1 cup of the boiling pasta water and set it aside. You will need this to thin out the thick canned soup.
Step 3
Sear the sausages & onion
• Heat a little oil or butter in a pan over medium heat.
• Add the sliced sausages and cook until they get a nice brown crust.
• Toss in the diced onions and sauté for about 3–4 minutes until they turn translucent and soft.
Step 4
Build the sauce & season
• Turn the heat down to low. Pour the can of Campbell's mushroom soup directly into the pan with the onions and sausages.
• Add your seasonings: 1/2 tsp garlic powder, 1/2 tsp Italian seasoning (or oregano), a good pinch of black pepper, and a pinch of chilli flakes (optional).
• The soup will be very thick. Stir in 1/2 cup of the reserved pasta water to smooth it out into a creamy sauce. Let it simmer gently for 2 minutes.
Step 5
Combine and serve
• Toss your drained pasta directly into the sauce.
• Stir well so the sauce coats every piece of pasta. If it still looks too thick, splash in a little more pasta water.
• Taste it, add more black pepper or chili flakes if you like, and serve hot!
