Instructions
Step 1
Heat 2tsp olive oil in large saucepan on high
Step 2
Season each side of salmon filets with salt and pepper, place in hot oil
Step 3
Cook 3-4 minutes on each side until flakes easily, internal temp 145. Then remove salmon from pan
Step 4
Heat other 2 tsp oil on medium high heat
Step 5
When oil is HOT fill with tomatoes (will splatter, use lid as guard)
Step 6
Toss tomatoes to make sure they are covered in oil
Step 7
Add onion and garlic, gently stir until onion is softened
Step 8
Add spinach, heat until cooked through
Step 9
Add golden raisins, stir and saute until heated through (1-2 minutes)
Step 10
Mound vegetables next to salmon on plate, drizzle salmon and vegetables with balsamic glaze
