2 Tbspextra-virgin olive oil

1onion
large, diced

2cloves garlic
minced

32 ozbeef broth

1 cupred wine

1 Tbspworcestershire sauce

1 Tbsptomato paste

1 Tbspdried rosemary

1 Tbspdried thyme

1 tsppaprika

½ tspsalt

½ tspblack pepper

1bay leaf

3carrots
medium, peeled and cut into 1-inch pieces

2celery stalks
cut into 1 - inch pieces

1 lbred potatoes
small, scrubbed

2 Tbspcornstarch

2 Tbspfresh parsley
minced, for garnishing
Instructions
Step 1
In a shallow dish, combine the flour, salt, and black pepper. Dredge the beef in the mixture. Set aside.
Step 2
In a Dutch oven over medium-high heat, heat the olive oil until it shimmers. Add the onion and garlic and cook for 1-2 minutes, until softened. Add the dredged beef and cook for 3-4 minutes, until browned.
Step 3
Stir in the broth, wine, worcestershire sauce, tomato paste, rosemary, thyme, paprika, salt, black pepper, and bay leaf. Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes. Add the carrots, celery, and potatoes. Cover and simmer for 1 hour, until vegetables are very tender.
Step 4
In a small bowl, make a slurry by combining cornstarch and some stewing liquid. Pour the slurry back into the pot and simmer for 10 minutes, until the stew has thickened. Discard the bay leaf. Garnish and serve.
