Ingredients
4 servings
500gbeef mince
although this works just as well with chicken mince, pork mince or tofu
250gnoodles
thin, thin egg noodles, soba or ramen, pictured is ramen
1 tspgarlic
freshly minced
1 tspginger
grated, I keep a knob of ginger in the freezer and grate on demand
⅓ cupsweet chilli sauce
⅓ cuptamari
or all purpose soy sauce
1 Tbsprice wine vinegar
2 Tbspolive oil
2spring onions
finely sliced
2 cupsvegetables
I used frozen broccoli
1chilli
sliced, optional
chilli oil
to serve, optional
sesame seeds
to garnish, optional
Instructions
Step 1
Cook noodles as per packet . Rinse with cold water and set aside.
Step 2
Heat large skillet on high heat. Add olive oil, garlic and ginger, cook 30 seconds until fragrant.
Step 3
Add beef and cook until sealed 2-3 minutes.
Step 4
Add sweet chilli sauce, tamari (or all purpose soy sauce if using) and rice wine vinegar. Cook 2-3 minutes until sauce the sauce has thickened and caramelised. Try not to stir it around too much, the sauce will thicken more quickly with less movement.
Step 5
Add the vegetables. Place the lid on, cook additional 2-3 minutes or until vegetables are cooked to your liking.
Step 6
Add the noodles and spring onion, cook 1 minute or until the noodles are heated through.
Step 7
Serve with sliced chilli, chilli oil drizzled on top and sesame seeds if using.
