Sweet Potato Spaghetti

A great way to cut the acidity of tomato sauces without adding white sugars while adding additional nutrients like fiber, vitamin A, and vitamin C. You can make your own spaghetti sauce or add it to premade spaghetti sauce. to make the recipe simpler you can use premixed Italian seasoning. Plus, to make the recipe faster you can microwave the sweet potato instead of baking it.

Instructions

Step 1
Cook sweet potato until soft and easy to dice. In food processor blend together sweet potato and canned tomatoes until smooth.
Step 2
In large sauce pan, melt butter and saute mushrooms until reduced. Add garlic and onions and saute for 2 minutes.
Step 3
Add tomato mixture and spices to the mushrooms, garlic, and onions. Bring to a boil and reduce to a simmer, simmer for 25-30 minutes or until reduced
Step 4
Boil pasta and drain. Mix sauce and pasta together. Serve with bread or salad.
