Ingredients

⅓ cupolive oil

2 clovesgarlic
finely chopped

0.5red onion
small, finely chopped

1green bell pepper
finely chopped

1tomato
large ripe, chopped or half cup chopped and drained canned tomatoes

32 ouncecanned black beans
with liquid

1 teaspoonground cumin
Dashes Tabasco

2 tablespoonred wine vinegar

1 ½ teaspoonsea salt
Instructions
Step 1
In a medium size sauce pan over low heat, heat the oil then cook the garlic, onion and bell pepper 10 minutes.
Step 2
Add the tomatoes and cook 10 minutes.
Step 3
Add the beans, cumin, Tabasco and vinegar. Simmer covered 20 minutes.
Step 4
Add the salt.
