Meatball Ingredients

1 poundground turkey

2 cupspanko breadcrumbs

1egg

1 teaspoongarlic powder

½ teaspoonsalt

¼ teaspoonpepper

Soup Ingredients

2 tablespoonsolive oil

1onion
diced, large

3carrots
diced

2stalks Celery
diced

3 clovesminced garlic

1 tablespoontomato paste
optional

2bay leaves

1 teaspoonthyme

¼ teaspoonred pepper flakes
optional

1 teaspoonsalt

½ teaspoonpepper

½ cupwhite wine

64 ouncesStock

4 cupsbaby spinach

1 cupditalini pasta

2 teaspoonslemon juice
Instructions
Step 1
In a large saucepan, sautée the onions, carrots, celery, and salt in the olive oil.
Step 2
Once the vegetables are soft, add the garlic and tomato paste.
Step 3
Cook for 1-2 minutes, and then add the white wine.
Step 4
Cook for another 5 minutes adding the bay leaves, thyme, red pepper flakes, and pepper during the cooking time.
Step 5
Add the stock and bring it to a boil.
Step 6
Once boiling, make small bite-sized meatballs and drop them into the soup.
Step 7
After adding the meatballs and letting them cook for 2-3 minutes, add the pasta.
Step 8
Reduce the heat to a simmer, and cook for 15 minutes.
Step 9
Add the spinach. Let the spinach wilt into the soup. Then finish with the lemon juice.
Step 10
Serve as is or topped with grated Parmesan Cheese.
