Ingredients
4 servings
1White Onion
or Red, halved, peeled and chopped
2 tablespoonsvegetable oil
2 clovesgarlic
crushed or finely chopped
3 tablespoonssoy sauce
3 tablespoonssweet chilli sauce
3 heaped teaspoonspeanut butter
1 teaspoonchilli sauce
3Carrots
peeled chopped in to sections then matchsticks
1Red Peppers
or Yellow, wash and chop in half de-seed and chop in to strips
edamame beans
defrosted, or any other suit
1Broccoli
or Cabbage, wash and chopped into small sections
2Chicken breast
cubed or sliced
2 portionsdried noodles
cook in boiling water for 2 mins while stir-frying
salted roasted peanuts
Instructions
Step 1
Heat oil in Wok for a few mins until hot

vegetable oil2 tablespoons
Step 2
Add onion , stirring occasionally for 5 or so minutes until starting to soften (Over medium heat)
Step 3
Add garlic and ginger, stir in and cook for 1 minute or so (add any fresh sliced chilli if using here too)
Step 4
If using raw chicken add at this point and cook for 5-10 minutes stirring often until cooked through / no pink
Step 5
Turn up the heat a bit and add all the Veg , in a couple stages , hardest first (eg carrots and Broccoli) the the rest 2 mins later, cook for 5-10 minutes stirring often until just starting to soften.
Step 6
Turn the heat down a bit and pour over the sauce, stir in well to coat and heat
Step 7
Add warm noodles and stir in well to coat with sauce
Step 8
Serve with peanuts scattered over the top
