1. Cook the rice

. Cook the rice as per packet instructions.

2. Create the curry base

Heat 1 tbsp of oil in a pan over medium-high heat and fry the onion and tomatoes for 3 mins to soften.

- Add the Masala Paste and cook for 2 mins.

. If you're making this with chicken, add it to the pan and cook for 3-4 mins, then continue with step 3.

3. Add the coconut milk

Add the coconut milk and Coconut Paste to the pan. Gently bring to the boil then turn down the heat and simmer for 5 mins, so that the sauce thickens slightly.

Stir in the Spice Blend then add the cod. Let it simmer for 5 mins, or until everything's cooked through.

Serve! Serve the curry over rice with some coriander and a squeeze of lime (optional).
