Miso Marinade:
Panko Mix:
Instructions
Step 1
Cook wild rice as per instructions.
Step 2
Slice portobello mushrooms and make a miso marinade of white miso and sesame oil. Rub the mix into portobello mushroom and roast in a hot oven (200c fan) for 7-10 minutes.
Step 3
Rub heritage carrots in the same mix and roast in the same oven for 10 mins.
Step 4
Toast panko bread crumbs and black sesame seeds in pan with a little oil.
Step 5
Roll sliced mushrooms in the panko bread crumbs.
Step 6
Serve with chillies, spring onions and micro herbs.
