Step 1
Fry onion until soft add chicken, brown, add garlic and chilli fry 1 min. Stir in pesto, stock and tomatoes, add thyme & season. Cover with lid and cook on low for 40mins.

Heat oven to 180.
Step 3
Make dumplings with 50g of the cheese (rub flour and butter together) Divide into 8 balls and arrange over stew, scatter with remaining parmesan
Step 4
Bake uncovered for 25mins or until dumplings are doubled in size and golden brown
