Instructions
Step 1
PREP: Cut broccoli, onions & bell peppers into bite-sized pieces. Slice beef into bite-sized pieces and a eason with salt & pepper. Make a slurry by mixing cornstarch into water.
Step 2
Put 1 C rice in large pot with lid with 2.5 C water on med. heat. Once it boils, set timer for 20 min. Meanwhile, steam broccoli in a strainer basket over rice for 3 min. Set aside.
Step 3
In wok or deep sauté pan over med.-high heat, add oil, garlic, onion, and bell peppers. Stir until garlic becomes fragrant. Add beef and fry until cooked through.
Step 4
Push beef to edges, creating a well in middle. Add better than bouillon, some water and a little of the cornstarch slurry; stir it in. Once it starts to thicken, add broccoli and mix together.
Step 5
Make a well again and add water to make enough sauce for your family. Add cornstarch slurry a little at a time until sauce is desired thickness. (Taste sauce and adjust amount of water or better then bouillon to your taste.)
Step 6
Serve with on a bed of rice.
Notes
Step 7
We like our onion and peppers crunchy, so I add half of them with the garlic and the other half with the broccoli.
Step 8
Better than Bouillon can be found in most supermarkets next to the bouillon cubes. It comes on beef and chicken. I use it to fortify soups, in place of broth, & as bouillon.
