Chicken Gyros with onion, tomato, and spiced chips enriched with Tzatziki

Instructions

Step 1
Mix all marinade ingredients in a bowl. Add chicken thighs. Cover and leave in fridge for ~ 3 hours
Step 2
Preheat oven to 220. Put oil on the baking trays and put the trays in the oven to heat the oil. Meanwhile cut the potatoes into chips. Add chips to the hot oil and season with spices. Bake chips for an initial 20 minutes

Step 3
Whilst chips are cooking, prepare flatbreads with Tzatziki. Cut onion and tomatoes. Remove chicken from the fridge. Cover baking tray in foil and place chicken on top.
Step 4
Once the chips have been in for 20 mins, remove and flip the chips. Add extra oil if needed. Place chicken thighs in the oven with the chips for 20 mins.
Step 5
After 20 mins, slice the chicken whilst in the baking tray. Line the flatbreads with the chicken. Garnish with onion, tomato, and chips. Wrap in baking paper or foil and serve
