Instructions
Step 1
Dice onion, carrot and celery.
Step 2
Add to pot with olive oil and creole seasoning. Sauté until soft.
Step 3
Add in chicken broth and bring to boil.
Step 4
Add beans, tomatoes, green chili, hominy and the rest of the seasoning.
Step 5
Simmer for at least 30mins.
Step 6
Dice potato into 1/2in-1in cubes. Add to pot and boil until soft.
Step 7
Serve with seasoned cheese and butter fried tortilla or tortilla chips to taste.
