Step 1
Chop all veg. Finely chop onions and garlic, thinly slice spring onion. Deseed chilli and finely chop, peel and grate ginger

Peel and chop sweet potato into bite sized pieces
Step 3
Hest oil in a large saucepan on high heat. Slice tofu into bitesized pieces and cook for 5-8 minutes until slightly golden on each side. Remove the pan and set aside. Add all veg except sweet potato to pan. Reduce heat and cook on medium for 2-4 minutes. Stirring occasionally until onions start to brown.
Step 4
Add sweet potato and spices to the pan, with a pinch of salt. Cover pan with a lid and cook for 10 to 15 mins. Until nearly soft and cooked through, stirring occasionally.
Step 5
Blend all liquid ingredients together. Add to pan and bring to a boil, reduce to a simmer and cook for 10 to 15 mins.
