mince the garlic and put in a bowl and cover with olive oil

dice the peppers and mushrooms

chop the sausage into bite-sized cylinders and sear

in a big enough pot (3 gallons for the full recipe), sweat the garlic and oil
Step 5
Add mushrooms and peppers, season with paprika salt and pepper, and cook until the mushrooms stop leaking and get some color on them
Step 6
Add canned tomatoes, sausage, basil, oregano, thyme, and a dash of cinnamon
Step 7
Simmer for basically ever. At least 2 hours. To prevent burning, stir (making sure to scrape the bottom thoroughly) every half hour or so. After every stir, taste and adjust seasoning as needed. Do not over salt!
Step 8
You're done. Serve with pasta or whatever, you're not new to tomato sauce you know what to do here.
