Instructions

Step 1
Slice ginger, scallion and onion into thin slices, set aside.
Step 2
Slowly heat up Thai chili in a heated pan on low heat, cook until they turn crispy, and simply grind chili in a stone grinder into evenly crushed chili powder
Step 3
Mix fresh crushed Thai chili powder with regular crushed chili powder, top with white sesame seeds.
Step 4
Pour cooking oil in a pot to heat up to the right temperature (until it starts to smoke), simply shut off the heat and sit for a few minutes to cool off.
Step 5
Gently drop scallion, sliced ginger and onion, garlic and cilantro in heated oil (watch for oil splash), cook until they turn brown, and further add in bay leaves, Amonmum Tsao-ko, Star Anise and Szechuan peppercorn for a few more minutes.
Step 6
Remove residue (ginger, onion, scallion, garlic and herbs once they are golden brown) from the oil and heat up oil to the right temperature.
Step 7
Simply pour a few spoons full of heated oil in prepared chili powder, stir while pouring. Further add in remaining oil in the chili to stir well.
