Step 1
In an oven dish, roast the aubergines and tomatoes together with a spray of garlic Fry-Light and balsamic vinegar.
Step 2
In a pan, fry the onion with the garlic, sundried tomatoes and lentils, 2-3 mins until fragrant. Drizzle honey.
Step 3
Mix both in a bowl with the rocket, crumble feta on top. Season to taste.
