Step 1
Pat dry chicken thighs then dredge in flour. Bring a large pot to medium high heat. Cover the cooking surface in olive oil and saute the garlic and shallot until softened. Add the chicken and mushrooms and saute until the chicken is browned. Reduce heat to a simmer and immediately add the broth, tomato paste white wine and dry spices. Cover the pot and simmer ingredients for 45 minutes stirring occasionally. Add salt and pepper to taste once done.
