Instructions

Step 1
Combine rice, cherries, turmeric, 1 1/4 cup of water and pinch of salt in pot. Bring to a boil and lower heat to low, stirring once. Remove pot from heat when all water is absorbed. Fluff rice, uncover and set aside.
Step 2
Roughly chop spinach. Dice onion into small peices. Heat 1 table spoon of oil in medium pan. Add almonds for about 4 minutes. Place to the side.
Step 3
Season chicken with spicy chicken rub, salt and pepper. Heat 1 tablespoon of oil when hot add chicken. Cook 6 minutes per side. then let rest.
Step 4
Add 2 tablespoons of oil to pan when simmering add onions and saute. When brown and soft add to rice.
Step 5
Cook spinach until wilted with 1 teaspoon of oil.
Step 6
Add 3 tablespoons oil to pan when oil is simmering add rice. Press down and let simmer for 5 minutes.
Step 7
In bowl add yogurt, and spinach. Spread on plate and top with rice than chicken.
