Ingredients

1tin chickpeas
500gpassata
150mlstock
1red pepper
diced
1red onion
diced
1courgette
diced
cherry tomatoes

2garlic cloves
1 tablespoonsundried tomato paste
12green olives
halved
1 tablespoonbalsamic vinegar
1lemon zested
1 teaspoonchilli flakes
1 teaspoonsmoked paprika
300gprawns

Wholemeal pittas

Instructions
Step 1
In a deep pan, heat one tablespoon of olive oil. Sweat all the diced vegetables and garlic for 10 minutes.
Step 2
Add the olives, spices and paste. Sweat for another 5 minutes.
Step 3
Add the chickpeas, tomatoes, passata, stock, vinegar, and a crumble of feta. Simmer for 10 minutes to thicken.
Step 4
Add the raw prawns and turn off the heat. Leave to stand for 5 minutes so the prawns cook through.
Step 5
Garnish with crumbled feta, lemon zest and parsley. Serve with toasted pitta.
