Instructions
Step 1
Bring 1 tbsp olive oil to medium-high heat in a large pot.
Step 2
Chop onions and dice garlic and add into pan.
Step 3
Saute until slightly translucent about 4-5 minutes.
Step 4
Add in broth, carrots, potatoes, 1 tsp salt, and herbs.
Step 5
Bring to a boil and then lower to simmer.
Step 6
Once potatoes are tender when pierced with a fork add in coconut milk.
Step 7
Stir in another 1tsp of salt, then transfer contents to a blender.
Step 8
Blend until creamy and smooth and then pour back into pot and simmer another 10- 15 minutes.
Step 9
Add more salt to taste if needed.
Step 10
I recommend letting it cool down a good amount before serving; the flavor really pops when it's not piping hot.
