Instructions

Step 1
Preheat oven to 180°C (350°F, Gas Mark 4) and lightly grease 12 muffin tin holes.
Step 2
Cook the bacon in a frying pan over medium heat.
Step 3
Drain off excess fat and cut into pieces.
Step 4
In a large mixing bowl, beat the eggs until smooth.
Step 5
Add the cream, salt, cheese and stir to combine, then add the spinach, tomato and cooked bacon and stir.
Step 6
Spoon the egg mixture into the prepared tin holes.
Step 7
Place in the oven and bake for 20 minutes until cooked.
