Step 1
In a medium bowl whisk together pancake mix, milk, 1/3 cup diced mango, sweetener, and vanilla.
Step 2
Heat a lightly oiled pan over medium heat, and scoop 1/3 cup of batter for each pancake. Cook until the top is bubbly and the edges are golden, flip and cook until both sides are golden.
Step 3
Serve with dried coconut flakes and remaining mango!
