Black Eyed Peas (or Lima Beans) and Ham Soup
The perfect way to use leftover ham. If you made ham on New Year's Eve, this is a great tradition to start for New Year's Day. Use lima beans instead if you prefer them.

Ingredients
12 servings
6 ouncescooked ham
diced
2 x 12 ouncefrozen black eyed peas
bags, or lima beans
2 tablespoonsolive oil
0.5onion
medium, diced
1carrot
medium, diced
0.5 stalkcelery
diced
2 tablespoonstomato paste
4 cupsvegetable stock
or juices from leftover ham or water
4 cupschicken stock
creole seasoning
or cajun
garlic powder
garlic and herb seasoning
optional
salt
pepper
Instructions
Step 1
In a 5 quart dutch oven, heat oil over medium heat.
Step 2
Add onions, celery, and carrots and saute just until onions are beginning to become transparent, about 5 minutes.
Step 3
Add tomato paste and stir. Then add liquid, garlic powder, and creole or other seasonings. Add peas or beans and ham. Cover and bring liquid to a boil, then lower to a simmer and cook for 30-40 minutes. Test along the way and add salt and pepper if needed.
Step 4
Great served with rice.
