Ingredients

1red onion
medium, diced
1 clovesgarlic
fresh ginger
small piece, minced
salt
to taste
black pepper
to taste
300gsweet potato
large, diced
100gred lentils
300mlveggie stock
400mllow fat coconut milk
frozen spinach

Instructions
Step 1
Heat a large pot over medium heat. Add some oil spray to the pot and fry onion, garlic and ginger until the onions are soft.
Step 2
Add the diced sweet potatoes and lentils to the pot. Add the vegetable stock and stir. Then place the lid on top of the pot and bring to a boil.
Step 3
Simmer on low to medium heat until the sweet potatoes are soft (about 20min). Open lid after 10min The liquid should also be reduced.
Step 4
Last, add the coconut milk and spinach to the pot and stir. Place the lid on top and continue to simmer the stew about 10 minutes. Season with salt and pepper and optional cumin and tumeric. Serve with rice, fresh bread or on its own!
