Instead of bite size chunks of chicken use a meat tenderizer/mallet and cut into strips. Serve with Chips or Rice

Ingredients

4skinless and boneless chicken breasts
cut into bite-sized chunks
1red pepper
cut into bite - sized chunks
1onion
finely chopped
330mlcola
can
200mlchicken stock
hot
8 Tbsppassata with onions and garlic
4 Tbsptomato purée
2garlic cloves
finely chopped
2 tspgluten-free Worcestershire sauce
1 Tbspdark soy sauce
1 tspdried mixed herbs
200gsugar snap peas
4 ServingsSteak Fries
Instructions
Step 1
• Spray a large non-stick pan with low-calorie cooking spray and place over a high heat. Add the chicken, peppers and onion and stir-fry for 5-7 minutes, or until lightly browned.
Step 2
Meanwhile cook your steak chips in the air fryer
Step 3
• Add the diet cola, stock, passata, tomato purée, garlic, Worcestershire sauce, soy sauce and herbs and stir well. Bring to the boil, cover, reduce the heat to medium-low and simmer for 12-15 minutes.
Step 4
• Add the sugar snap peas, stir and increase the heat to medium-high. Cook for another 10-15 minutes, or until the chicken is cooked through and the veg is tender.
