Chicken Satay Stir-Fry

Ingredients
5 servings
Satay Sauce
4 Tbspsmooth peanut butter
3 Tbspsoy sauce
2 Tbsprice wine vinegar
1 Tbspbrown sugar
125mlwater
1 Tbspcornflour
mixed with 2 tbsp water
Stir-Fry
Instructions
Step 1
Mix half of spice mix with chicken and keep remainder for stir-fry, season and leave for at least 30 mins.
Step 2
In a bowl mix satay sauce ingredients together and set aside.
Step 3
Heat oil in a large pan, add chicken and cook over high heat until just cooked, remove.
Step 4
Add onion, cook for3-5 mins until softened, mix through garlic & ginger for 1 min. Add in peppers & green beans, season well & cook for 5-7 mins until softened. Stir through remaining spices.
Step 5
Add chicken back in and heat through, Pour in satay sauce & coconut milk if using. Bring to a simmer and stir in coriander.
Step 6
Serve with rice with crushed peanuts & fresh coriander on top.

This one definitely works. I added coconut milk and it made the broth so rich and creamy and just toned down the sharpness really well. I'd always been curious about peanut satay and this didn't let down. 😋 My 8 year old who at first declared she "didn't like this!" has just gone for 2nds, so yay! 😆
