BLUEBERRY, LEMON & POPPY SEED OVERNIGHT OATS

I had a delicious blueberry, lemon and poppy seed muffin the other day and decided I needed more of that flavour in my life! So I made blueberry, lemon and poppy seed overnight oats. It’s a delicious way to start the day by kicking off your fibre goals and getting your daily berry intake. Blueberries are a little nutrient powerhouse (especially vitamin C, K, manganese and potassium) and flavanols, which have antioxidant and anti-inflammatory effects.
If you like your brekky on the sweeter side, you can add a chopped date or some maple syrup to it. I find that it really depends on how sweet the blueberries I’m using are, so if in doubt, you can always add a little sweetener later 😊
