Spinach + Mushroom Pasta w/ Zucchini Spirals

Instructions

Step 1
Bring 8 cups of salted water to a rolling boil. Add pasta. Cook according to box directions.
Step 2
Heat a large skillet with 2 tbsp olive oil. Add garlic and sautée until fragrant. Add zucchini pasta and mushrooms. Season with salt and pepper, sautée until tender.
Step 3
Before draining pasta, reserve 1/4 cup pasta water. Drain pasta. Add spinach and precooked chicken sausage to the skillet. Season with salt and pepper. Sautée until spinach is wilted.
Step 4
Add drained pasta to skillet. Add butter, pasta water, Italian seasoning, red pepper flakes, parsley and lemon juice. Stir until butter is melted and a light sauce forms.
Step 5
Top finished pasta with parsley and parmesean cheese. Serve and enjoy!
