Jumpin’ Jack Chicken Bowls with Rice, Sour Cream & Lime

Instructions

Step 1
Pat chicken dry with paper towels; season with Southwest Spice, salt, & pepper.
Step 2
Heat lg. drizzle of oil in lg. pan over med.-high. Add chicken; cook (4-6 min.), stirring occasionally, until browned & cooked through. • Stir in scallion whites; cook (30 sec. • Stir in ½C water, Tex-Mex paste, tomato paste, & juice from half of lime until thoroughly combined. Bring to simmer; cook (1-2 min.) until sauce has thickened.
Step 3
• While chicken cooks, microwave rice according to package instructions.
Step 4
• Stir 1T butter into pan with chicken mixture until melted. Sprinkle with pepper-jack; cover pan (1 min.) until cheese melts. • Massage rice in package; divide between bowls. Spoon cheesy chicken on top. Dollop with sour cream & sprinkle with scallion greens. Serve with remaining lime wedges on side.
