Loaded Baked Omelet Muffins

Original recipe used 3 strips cooked chopped bacon, 3 tablespoons thawed frozen drained spinach, 3 tablespoons each diced tomatoes, diced onion and diced bell pepper, and 2 ounces shredded cheddar. Substituted bacon pieces, chopped fresh kale, medium salsa and fiesta blend shredded cheese.
