Creamy Tuscan Salmon

Instructions
Step 1
Season fillets with paprika, salt and pepper
Step 2
Heat 1 tbsp olive oil in a large pan, add salmon fillet side down, cook for 5-7 mins on both sides until cooked through. Remove salmon and set aside.
Step 3
Add tomatoes, season and cook over a low heat until just starting to burst. Mix through garlic, add spinach, season and cook until softened.
Step 4
Pour in cream, bring to a simmer, reduce heat, mix in parmesan and simmer for 1-2 mins.
Step 5
Add salmon back in and heat through.
Step 6
Sprinkle basil on top and serve with rice, pasta or potatoes.
