Instructions
Step 1
Cut the eggplant into pieces of different sizes, coat them with oil, season with salt, brown them in the air fryer.
Step 2
Caramelize the onion, and garlic with water, oil, salt in the sauté pan.
Step 3
Add the diced tomatoes and cooked eggplant, cook until the tomatoes start to breakdown. Deglaze the pan with water as needed.
Step 4
Add the zucchini’s and peppers. Season with salt and pepper. Put the lid on. Deglaze as needed.
