Instructions
Step 1
Cut the broad beans pods into small pieces, wash it drain the water.
Step 2
In a saucepan, Sauté the onion with 2 tbsp olive oil for 5 minutes, stir in the garlic until fragrant then add the beans, continue stirring about 2 minutes.
Step 3
Add 2 cups of water (or to cover the beans), oregano springs, bay leaves and bring it to a boil, simmering until the beans done or 10 to 15 minutes without covering the saucepan, so the broad beans doesn’t lose much the green color.
Step 4
Meanwhile, in another pot, on medium heat, boil the yogurt, with continuous stirring (with wooden spoon or yogurt will split) until thickened (if you like the sauce more thicker, you may add 1 tbsp of cornstarch).
Step 5
Add the boiled yogurt to the beans saucepan and let it simmer for 5 to 10 minutes, discard the oregano springs and bay leaves.
Step 6
In a small skillet, Sauté the sun dried tomatoes and chili flakes with 1 tbsp olive oil for 2 minutes, then turn off the heat.
Step 7
Pour the Foul Bil Laban in a serving plate, place the sautéed sun dried tomatoes in the center, drizzle it’s oil on top then serve hot.
