Instructions

Step 1
To prepare salsa, mix avocado, cucumbers, onions, cilantro, lime zest, lime juice, jalapeno, ¼ tsp salt and pepper in a bowl.
Step 2
Mix chicken and monterey jack in a bowl. Drain the beans and smoosh them - mix in the bowl.
Step 3
To assemble quesadillas, spread filling over half of a tortilla. Fold in half and coat with cooking spray.
Step 4
Heat a skillet over medium heat. When hot, add quesadillas and season both sides with salt to taste. Cook until browned and cheese is melted, about 1-2 minutes per side.
Step 5
To serve, cut into wedges and top with salsa.
