Step 1
Peel and thinly grade the potatoes. Dice the onion.
Step 2
Put the potatoes in a kitchen towel and squeeze out the water.

Put all the ingredients into a bowl and mix until well combined.

Heat the oil in the pan. Reduce the heat to medium. Spread the batter in the pan to make 2 even patties. Fry for about 4-5min each side.

Slice the avocado.
Step 6
Spread the bottom potato pancake with the sour creme.
Step 7
Place the salad, avocado and salmon on top.
Step 8
Finally stack the other potato pancake on top and enjoy!
