Preheat the oven to 350F/180C

In a saucepan, whisk together the coconut milk and curry powder and bring to a boil

Chop the chicken. Place the chicken pieces in a baking dish qnd pour the hot coconut milk - curry mixture over the top. Bake for 20 minutes, or until the chicken is cooked through.

Peel and dice the mango. Chop the cilantro. Combine the mango, cilantro and peas, then stir this mixture into the hot dish. Serve.
