Instructions
Step 1
In small bowl whisk together egg and egg yolk, sugar, mustard and cornstarch.
Step 2
In a saucepan combine vinegar, water and salt and bring to a boil over moderate heat. Whisk in egg mixture and cook till thickened. Remove from heat and whisk in butter. Whisk in mayonnaise. Chill, covered.
Step 3
Combine salad ingredients. Pour dressing over. Toss well. Season with salt and pepper.
