Mum's special lamb curry

This recipe was submitted by Chef Sudha Shanka Saha, a talented chef who has won many national accolades for his Indian cooking. Birmingham Post said that he "cook[s] some of the best Indian food in Birmingham". Chef Sudha says, "this recipe is taken from my mother's cooking. For generations the secret has been passes on, this is simple and straight forward technique , but got in depth flavour of right spicing with lamb."

Instructions
Step 1
Heat oil in a heavy bottom saucepan , add the onions cook till golden brown, add little salt while cooking the onion
Step 2
Add the ginger garlic paste and cook further till the raw flavour goes add all the spices and red dry chilly ( except garam masala)
Step 3
Cook for 4 mins occasionally adding little water , so that the spices don't get burnt.
Step 4
Add the lamb, mix thoroughly , add seasoning and extra water to make a sauce and cook till it is 3/4 done. Then add chopped tomato and finish off the cooking.
Step 5
Just before finishing add the garam masala and sprinkle with chopped coriander.
