Instructions
Fry the Pork
Step 1
A.) Bring a large saucepan of water to boil over high heat with 1/2 tsp salt
Step 2
B.) Heat a large frying pan on high heat (no oil). Once hot, add the pork and cook until browned, 4-5 minutes. Use a spoon to break it up as it cooks, then drain and discard any excess fat.
Step 3
C.) Meanwhile, peel and grate the garlic (or use a garlic press). Add the garlic to the pork and sprinkle over the Italian style herbs. Cook, stirring, for 1 minute.
Cook the pasta
Step 4
A.) Meanwhile, add the Penne to the saucepan of boiling water and bring back to boil. Cook until tender, 12 minutes.
Step 5
B.) When cooked, drain in a colander and pop back into the pan. Drizzle with oil and stir through to stop it sticking together.
Sauce things up
Step 6
A.) While the pasta cooks, add the Worcester sauce to the pork and allow it to bubble away until evaporated, 30 secs.
Step 7
B.) Sir in the finely chopped Tomatos, red wine and water for the sauce. Add a pinch of sugar (optional).
Step 8
C.) Bring to boil, stirring, then reduce the heat to medium and summer until the sauce has thickend, 5-6 minutes. Add a splash of water if it gets to thick.
Wilt the Spinach
Step 9
A.) Meanwhile grate the cheddar.
Step 10
B.) When the sauce has thickend, add the Spinach a handful at a time until wilted and piping hot, 1-2 minutes.
Combine and stir
Step 11
A.) Toss the cooked Penne through the sauce along with half the cheddar.
Step 12
B.) Taste and season with salt and pepper if needed.
Serve
Step 13
A.) When everything is ready, serve the pork Penne in bowls.
Step 14
B.) Sprinkle with the remaining cheddar to finish.
