Instructions

Step 1
Bring salted water to boil and then add your raw pasta. Cook according to package instructions.

2. Heat the olive oil in the pan and then using scissors chop up the chipolatas straight into the hot pan (each one chopped into 3 chunks).

3. Fry for around 4 mins until browned.
Step 4
4. Dice the onion and garlic and then add to the pan with the sausages.
Step 5
5. Stir together and season with the salt, pepper, chilli flakes and Italian mixed herbs.

6. Fry for another 4 mins until the onion is softened.
Step 7
7. Pour in the chopped tomatoes and spoon in the cremè fraîche.
Step 8
8. Stir together and then add in the pasta water, simmering for another 2 mins.
Step 9
9. Drain the pasta and pour into the pan.
Step 10
10. Give the pasta a thorough stir and then serve into four equal portions.
Step 11
11. Top each portion with 15g of grated mozzarella.
