Step 1
Place the beans in a bowl, cover it with water. Let it soak for at least two hours but preferably overnight. Drain and rinse the beans

Place a tall saucepan over medium to high heat. Once hot, add the olive oil, the cured sausages, bacon, onion, paprika, salt, pepper, bay leaves and garlic. Fry the meat on both sides until golden brown. Reserve the meat

Add the beans and cover with water

Bring it to a boil then reduce the heat to medium, let it simmer for around 30min, check if the meat is cooked with a fork and remove the cured meat from the saucepan, cut it into thin slices. Let the beans cook for longer.
Step 5
Check 45 min later if the beans are cooked through, if so take out approximately 1/3 of beans and water from the pot and blend it, otherwise let it cook for longer. Adjust the water and stir regularly to prevent from burning the beans at the bottom.
-The time that takes to cook the beans can vary according with how long you soak it for, and the quality of your beans.
Step 6
Peel and dice the potatoes, slice the carrots before adding them to the beans.
Step 7
Add a little bit more water if necessary and let it simmer for about 15 minutes or until the potatoes and carrots are tender.

Cut the cabbage in julienne
Step 9
Combine the cured meat and the cabbage with the beans and potato soup base. Cook for another 15 min or until the cabbage is cooked.
Step 10
Season it with salt, pepper and roughly chopped fresh cilantro.
Step 11
Serve it with a side of fresh crusty bread.
